Title: Vanilla Granola

Yield: 10 Servings

2cOld-fashioned oats
1/3cApple juice concentrate - thawed
2tbLight brown sugar
1tbGround cinnamon
1cUnsweetened flaked coconut
1 Vanilla bean - split & seeds removed
1cDried sour cherries
1cGolden raisins

Preheat the oven to 300F. In a large bowl, place the first four ingredients, and toss well. Spread the granola onto a large cookie sheet and bake for 25 minutes, stirring occasionally. Stir in the coconut and vanilla seeds, and bake for another 20 to 25 minutes, until lightly browned. Stir in the cherries and raisins. Cool and store in an airtight container for up to 1 month.
